It all started high up in the mountains, in Aspen Kogen — the highlands. There is a quietude that I found there, an aloneness; a being in this world but not of it.
Within that inner silence, this idea began. I wanted to bring an Omakase experience that most closely reflected the brand of hospitality that I was in search of — one that was elevated but replete with warmth at the same time.
Our beverage program we hope captures the essence of seasonality, inspired by alpine botanicals and high altitude sake (in brewing, water source, or both.) Kogen means plateau or highland in Japanese, and it is affixed to ski resorts.
We do not use or offer bottled sodas — we make our own. We love fresh low ABV and N/A beverages…and we hope you do too. (At least while you are with us — nothing wrong with a Boulevardier nightcap once home.)
These are all the efforts to support what happens on the main stage — it is a careful dance. (Thank you in advance if we may miss a step — we promise to catch up and do you right.)
Expect your visit to last 1.5 to 2 hours. (The later seatings may get rambunctious.) We can seat up to 5 guests–6 in a pinch–at the Omakase counter and we have 2 separate high tops right behind the counter.
Each of these bar tops seats 2 guests and we could do up to 5 guests there. Dining at these is more ideal for dinner dates and business related gatherings.
There are several parking lots around us — one beside us. Hang tight as the blue door will open at 5:15 p.m. and 8:00 p.m. respectively to welcome you inside.
